Although you can bokashi almost all food waste and biodegradable waste (- refer to Day 2 - Think Bokashi First), we are going to take baby steps during the first 30 days of your Bokashi Journey. Take out the 1.5Liter bottle of Bokashi Ipa and an ice cream tub and some trimmings of veggies/ fruit peels.
First Bucket -Stage 1 Segregation of Raw Veggies and Fruit Scraps and Addition of Bokashi Ipa

In the coming days we will learn
1) how to properly process food waste in small amounts; and
2) experiment on ANAEROBIC fermentation by lessening the amount of air our food waste comes into contact with.
--Lessening air contact manages odors and pests.
--Cutting food into small pieces helps fill spaces and eventually helps them decompose faster.
--Using paper to line and layer protects it further from air, absorbs extra moisture, and gives you a clean canvass everytime you open the tub.
--Lessening air contact manages odors and pests.
--The Bokashi Ipa contains microbes helpful for fermentation, but many fruits have helpful enzymes that do the same.
Your 1.5L of bran will be enough to process all the 20L tub can contain (for fruits and veggies only), so be mindful of the “sprinkling” amount.
Frequently asked questions: on Day 1-3
Can I add egg shells into my bucket? Not for the first 30 days. Here is what you can do for egg shells Start Collecting Egg Shells for Stage 4
Can I add onion and garlic peels? Yes, you can add onion and garlic peels in small amounts and you have to add more bran.
How about leftover cooked food? We will also bokashi leftover cooked food from Day 8 onwards. Focus on raw veggies/fruit scraps for now.
How about trimmings of raw meat/fish and seafood? We will add this from Day 22 onwards - when you have emptied the contents of your first bucket.
Why do we have to separate the different types of food waste? Why cant we dump it all? We need to have some baseline for a successful bokashi ferment - and the easiest to go about it is with raw veggies/ fruit scraps. After the 30 day challenge, you can put everything in (Veggies/fruit scraps, leftover cooked food, and trimmings of raw meat/fish/seafood) in the same bucket.
